Explore the Nantucket farmers market with Chef Jason as we meet the people behind the produce during a VIP tour. Students will learn a variety of skills to best utilize what the market has to offer. Each week will feature a different market-based lunch and cooking technique that may include: pickling, preserving, juicing, roasting, grilling and more.
In this class each student will gather a bounty of products from the market to create a lunch while using senses to see, feel, smell and taste the process along the way. Each participant will create their own farm-fresh lunch that will typically include a salad and some sort of light protein based entree. Menus will vary based on seasonal availability of ingredients.
Example dishes include:
Grilled carrot salad with brown butter carrot vinaigrette
Pickled and poached root vegetables
Pan seared local fish with onion soubise and chive spaetzle
*Wine and beer will be available for purchase on site for guests age 21 and over.
